DIRECTIONS:

Prepare strawberries by placing frozen fresh berries in food processor and blend until pureed. In a small saucepan, combine cornstarch and strawberry puree. Mix well. Bring mixture to a boil. Then, cook and stir for two minutes, or until thickened. Transfer to a large bowl and refrigerate until chilled. Make strawberry cream by setting aside 1 cup of strawberry mixture. Add condensed milk and orange juice to remaining mixture chilled in a large bowl. Add a few drops of red food coloring to make the strawberry color brighter. Stir until blended. Whip cream, then carefully fold into mixture. Refrigerate until you are ready to assemble. Assemble parfaits by spooning 1/4 cup strawberry cream mixture into each of 12 parfait dishes or cocktail glasses. Layer each with 4 teaspoons of reserved strawberry mixture and top with 1/4 cup of the cream mixture. Refrigerate until serving. Add toppings to make your parfaits unique by topping them with chocolate shavings, sprinkles or candy!

Strawberries also are rich in vitamin C, which strengthens the immune system, as well as manganese that aids in bone health and reduces inflammation and folate for healthy cell growth and red blood cell production.
